State Fair Recipes: Pig Mac & Pork Quesadillas

Today's recipes are quick and simple.  Both can be made in a matter of minutes.

Pig Mac
Using leftover pulled pork and mac n cheese you create an amazing grilled cheese.

Ingredients 
Texas Toast
Butter
pulled pork
mac n cheese
BBQ sauce

Directions
Heat a griddle to medium high heat.
Butter outside of Texas Toast
spread a thin layer of BBQ sauce on the inside of both pieces of Texas toast
Place one piece butter side down on griddle
put a spoonful (or two) of mac n cheese on top of toast,
add pulled pork and top with the other slice of bread.

Cook 2-3 minutes on each side until golden brown.
Slice in half and enjoy!

Pork Quesadillas 

Kids Version: 
Ingredients 
Mozzarella Cheese 
Pulled pork
Flour tortillas

Directions:
Heat a griddle or skillet to medium heat
Place flour tortilla in skillet
Sprinkle cheese and pulled pork on the tortilla
Using a spatula fold the tortilla in half and let is cook for a minute or two,
Flip over to the other side and cook for another minute or two until the cheese is melted.

Remove from skillet, cut into triangles.

Big Kid version:  
Ingredients 
Mozzarella Cheese 
Pulled pork
Salsa
Guacamole 
Flour tortillas

Directions:
Heat a griddle or skillet to medium heat
Spread guacamole on tortilla.
Place flour tortilla in skillet (guac side up)
Sprinkle cheese and pulled pork on the tortilla
Spoon salsa on top of mixture.
Using a spatula fold the tortilla in half and let is cook for a minute or two,
Flip over to the other side and cook for another minute or two until the cheese is melted.

Remove from skillet, enjoy!

These two recipes make me want to run to the kitchen and get started cooking!
